I love easy, simple and delicious snacks to take with me on the go. These sweet, no bake treats to throw together last minute are filled with ingredients that everyone loves! I’ve made dozens of batches of these energy balls over the years and while I’m always looking for fun ways to vary them for my family, I always come back to this simple one. In fact, when I was pregnant a few of you told me to make these lactation energy balls that were amazing to keep my milk production up!
There are several variations of this easy snack. They also go by different names such as power balls, protein balls or energy balls. There have been dozens of recipes across the Internet but this particular one is a family favorite in our house.
As much as I love basic energy balls recipes but they all comprise of four basic ingredients; oats, butter ( I use peanut butter but you can use a nut butter ), sticky liquid ( you can use maple syrup or honey ) and mix in-s. These vary on what you enjoy eating.
Below is the recipe I made but I can’t wait to try a few other combinations going forward.
- 1 Cup of old fashion oats
- 1/2 cup of peanut butter
- 1/2 chocolate chips
- 1/3 c Honey
- 1 T vanilla extract
- Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for 1 hour.*
- Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
- Makes about 20-25 balls.
