It’s soup season. That means I’m making all the yummy, creamy, and hearty soups in our house! This is a rich and perfect comfort food for getting through the fall and winter. Some of my favorite include Homemade Chicken Noodle Soup, Easy One Pot Lasagna Soup, and Kale Potato and Sausage Soup!

This is a simple and classic Italian recipe. You can actually make the entire dish with just five basic ingredients but it’s still extremely flavorful. The tortellini pasta is a cheese-filled which makes it even a richer dish than just noodle soup. The sausage adds all the spices and the fresh spinach brings an earthy taste to the entire dish.

I personally love eating this soup with crusty bread to dip in or as a side dish depending on how many people are going to eat with you. When I made this dish a few weeks ago, it became a ‘must’ recipe in our home. All you need to do is cook the sausage, add the broth and fresh spinach, heavy cream, and tortellini. Let it simmer a few minutes and you are good to go!
INGREDIENTS:
- 1 pound Italian sausage
- 6 c chicken broth
- 4 c spinach
- 10 oz cheese tortellini
- 1 c heavy cream
DIRECTIONS:
- In a large dutch oven over medium-high heat, crumble and brown sausage. When done, remove onto paper towel-lined plate. Drain excess fat from the pan.
- Return pot to heat. Add chicken stock, scraping up any brown bits on the bottom of the pan.
- Return the sausage to the pan along with the tortellini and add in the spinach, simmer 7 minutes, or until tortellini is cooked.
- Stir in the heavy cream and stir well to combine.
