Hello fall, it’s so nice to see you again! You know that best time of year where the air is crisp, the apples are ripe and you bundle yourself up in endless blankets. Yup, it’s my favorite time of year where I get to wear a baggy sweatshirt and nobody complains about it.
It’s also that time of year where I finally use my oven again and make all the warm baked goodies my family loves to enjoy. We’re pumpkin fans around here ( I know #Basic to a few of you ) but there really isn’t anything better then a delicious pumpkin spice latte… or how about muffin?
Not only are pumpkin spice muffins a huge hit, it barely allows you to lift a finger baking it because this super simple recipe ( just another favorite here ) only has 5 ingredients that you need. That’s right you did read that correctly – only 5 ingredients. In reality you probably already 3 out of the 5 so it makes you run to the grocery store to make them that much easier. You’re welcome 🙂
Ingredients:
- Spice Cake Mix
- 15 oz Pumpkin Pure
- 3 eggs
- 1c water
- 2/3c vegetable oil
Directions
- Preheat oven to 350
- Mix spice cake mix together with pumpkin. Scoop into lined or well-sprayed muffins.
- Bake 18-20 minutes
- Serve warm
Be warned- these do super quick. In fact, my kids asked for two each this morning for breakfast and who am I to deny something yummy while I sip my coffee for a few minutes? I may just add some chocolate chips or walnuts next time!
