We all know growing up that veggies were probably the last thing we wanted to eat at dinner. I remember throwing a huge tantrum because there was no way I was going to finish cooked carrots or raw broccoli. Now as a parent myself, I know the importance as well as the struggle to get my own toddler hooked on veggies so I needed to come up with a way that would easy, enjoyable and down right tasty!
My daughter and I love our sweets and she’s a banana monster so when I found these adorable Chocolate Banana Muffins at Publix the other day, I had to get them not only for looking and sounding delicious BUT they have a secret ingredient in them. Can you guess what veggie?! ZUCCHINI. Believe me, I almost fell over thinking how on earth I would be able to serve this to my daughter without her knowing there were actually veggies in this muffin!
Our favorite way to eat these muffins in heating them up for about 30 seconds and pairing it with some fresh fruit, milk or even running out the door if we’re in a hurry for story time or a play date! These muffins are perfect for on the go and did I mention barely has any veggie taste even though it’s packed with amazing ingredients like zucchini, carrots and only about 120 calories each! What could be better?!
