Zoodle Beef Stroganoff

I have such a treat for you today friends! This recipe was a huge hit in our home a few weeks ago because who doesn't love delicious hearty meals when it's super cold outside? However, a few of you suggested that I try and make this a little more carb friendly for those of you doing keto or faster way to fight loss so I decided that last week, we would enjoy this dish not with pasta but with zoodles!
I've made zoodles a few times and my kid actually enjoy eating these vegetables without realizing that it IS a vegetable. Win win for parents everywhere! Anyways, I thought I'd share the recipe with you in hopes that you also enjoy it, plus with less then 6 ingredients and simmering in a crock pot all day, what's not to love to throw it in the crock pot and walk away for a few hours?!

Ingredients:
1 packet of Ranch Seasoning
1 packet of Italian Seasoning
1 packet of Brown Gravy
1 lb of chuck roast
1 onion ( diced - I use this handy dandy chopper for years! so much easier than watery eyes)
2 c of water
crock pot liner ( optional but always helpful )
2 zucchini
spiraizer

Directions
1. Line your crockpot
2. Dice your onion ( use THIS )
3. Add chuck roast, diced onion, packet of ranch seasoning, italian seasoning and brown gravy into your crock pot
4. Add 2 c of water over your roast. Spread mixture everywhere
5. Set on low for 8 hours
6. A half hour before you eat, spiralizer zoodles and set aside
7. Shred your beef and add on top of zoodles along with some of the liquid to add as a sauce
8. Serve and enjoy!

I love that my family ( including my toddler and almost kindergarten ) actually LOVED this easy meal and I love that I can literally put it in a crock pot, set it and forget it! It's now a huge staple in our home for the winter time and I can't wait to hear what you all think when you make it at home for your own family! Let me know if you do!

  2. I will have to try this sometime for sure. I think everyone in the house would enjoy it. I haven't tried these kind of noodles yet. We tend to like the real stuff, but I'm always open for trying something at least once!

  3. We often thought about eating only Paleo and my husband even bought a Paleo cookbook so we could make delicious recipes. Even thought it's hard for us to follow a Paleo diet, I want to try yours here - it looks really good!!

  13. Oh so yummy! I've been cooking a lot lately with zoodles. Great way to cut back on high carbs. This dish looks absolutely tasty. So I can't wait to try it for myself. Adding it to my low carb recipe bin :)
